For my defense, I'm presenting my research. I'm doing a findings summary. In my paper I have four case studies. Do I need to talk about all of them or can I choose to just highlight one. I think that just doing one would be infinitely easier and allow me to go into more depth. But. I don't know how to do these things.

I recommend mentioning that there are four, then going into detail in the one you want to highlight, then giving a brief description of each of the other three and what you got from them.

It might also be a good idea to make slides explaining the other three, and put them at the end so you can show them if people demand more information, but not otherwise.
